Though the species of glass eel is the same throughout Europe, the methods of catching and handling adopted in different countries , will significantly effect the quality and survival of the glass eels.
UK Glass Eels makes every effort to control the quality of the glass eels at every stage of production. It is difficult in France to identify the source of each batch of glass eels. In the UK with the smaller total catch it is possible to track each batch of fish from the source to the point of dispatch and know exactly where the fish were caught and how long they have been stored.
When storage temperatures are outside the optimum parameters our storage facilities can be heated in the winter and cooled in the spring.
